Cava Rosat Questions
Ver mensaje de WaltZalenskiFrivolous though it may be, I have a preference for champagne rosé. What are the best cava rosats? Are they made, like 98% of champagne rosé, by adding still red wine or does the color typically come from the maceration process? I can’t recall any memorable examples other than Agustí Torelló Mata Rosat Trepat, but I have tried very few since I can only get decent cava when I’m in Spain.
Also, while we are on the subject of cava generally, what are the best recent vintages.

The process is not maceration... I was talking via e-mail with the oenologist (is it the righ word to say this?) about it and it’s something extremely difficult to understand for me... It’s related with the treatment of the grapes in the vine. Some years this cava is clearer and sometimes not, depending on the weather, ’cos they make that some pigments of the skin goes to the pulp and no further contact with skins are neither made nor necessary... Astonishing, at least, for me.

Ver mensaje de joseI also do not understand what the oenologist is saying. In champagne almost all rosé is made from adding a small amount of still red wine to the champagne. A tiny percentage produce the more intense color from greater contact with Pinot grape skins during maceration. It sounds like this winemaker says there is a third method, and I wonder if this method is common to all rosé cavas.
AFAIK is not a common method...
