    Hi all,
    does exist something like a rule of thumb when we’ve a sweet dish as main course? A wine with more acidity? a sweet wine? a sweet and acid wine ;) ? Yep, I know it depends on the kind of dish we are talking about, it’s not the same foie with something sweet as a garnish, or something with apple pureé or something like that... Yeeeeep and I know that it strongly depends on the likes of each one and that every rule is made to be broken, but well, I’d appreciate your comments and suggestions.

    This question is on my mind ’cos I’m wondering what wine to pair with a figs and gratin goat cheese mille-feuille. Maybe I’d reduce a bit of oloroso and when the dish come out of the oven I’d prinkle it with this reduction, then the dish would be paired with the same oloroso.

    Hello there,
    Sweetness in main course is a very good experience in cuisine and Asian cuisine and also some French has it. As far as I am concerned some sweet wines may pair with a lot of dishes, especially when you have a good acid structure... Chenin Blanc sweet wines (as in Loire Valley : Coteau du Layon, Chaume, Bonnezeaux...) have a great balance between sweetness and acidity, and will marry well with sweet and sour flavours. The citrus, honey, exotic fruits sides of these Loire Valley sweet wines will complement very well your dish and also other as Blue Cheeses, ";fromage persillé";, foie gras, dry fruits, bitter chocolate, fishes and also by itself. These wines are great to drink all along the meal. Another wine might be a good choice for your dish, an old vintage red wine, as Bordeaux with softer tannins. I personnaly like the sweet wines from Loire.

    Sushiwine (btw, it’s not mandatory, of course, but we would appreciate if you use a real name ;))).

    Finally I drank an Oloroso wine with the dish I said (figs with goat cheese, etc) and it was a great (great! great! :) pairing.
