In good years, Roger Sabon makes four cuvees and this is the second best, made from vines approximately 80 years old. His top wine is the “Secret de Sabon, made in tiny quantities (around 3,000 bottles). Double decanted 30 minutes ahead of dinner, a dark strawberry optic. Noticeable aniseed and cooed aubergine (US = eggplant), with a little rosemary herb. A tight core of red fruits with vibrant acidity that tingles my tongue. A powerful palate with a velvet mouthfeel and balanced waves of fruit. A long finish that hints at the 15% alcohol. Very impressive but still young for my palate.
